Misty Pot · Kitchen notes

From our kitchen

Notes on broth, banchan and the moments that bring us together.

On Broth 01

Seolleongtang

Seolleongtang with sliced beef and spring onion in milky beef bone broth, served with rice and radish kimchi at Misty Pot.

The essence of seolleongtang is the quiet balance of broth, meat, temperature and texture.

Even during a busy service, we consider the balance of fat and lean meat, the thickness and timing of each slice, and the richness of the broth. Small details complete the dish.

On Banchan 01

Mu namul

A Korean table is completed by its banchan.

These small dishes complement the main, bringing balance to the meal as a whole. Our banchan is made fresh every day; mu namul, gently cooked radish, is part of that daily rhythm.

Care in the small things, as well as the centre of the table.

On Celebration 01

A taste of home

Wherever Chuseok finds us, familiar food brings us a little closer to home.

Golden jeon, silk-soft japchae and tender galbi jjim, prepared with care and meant to be shared.

Cooking together, then taking the time to share the table. Our warmest way to celebrate.
